The best place to have a date night in Waco. From arrival, the staff were friendly and attentive. The host was welcoming and set us up with the perfect seat per our needs. Our server, Jasmine, was fantastic. She never missed a beat explaining the menu and building history. The beverage selection is viewable on a tablet device provided when you sit. They offer wine flights, glasses, and bottles. They also have some amazing craft cocktails.we opted for a bottle of red blend. We started with Lobster appetizer. It was good, buttery garlic cheesy good. but I will try something different next time. Our next course was house salad and lobster bisque. Both were a must try! Delicious. And for a bread, they have the most amazing popovers. These were a 5-star attraction on their own butter flaky crossaint like cheese and rosemary. We ordered the chef selection petit filet and trio of filet. Both Steaks were cooked to perfection, the miso glazed salmon was perfectly cooked, and most. We ordered the bacon Brussel sprouts as a side, and the portion was huge. For dessert, we had the butterscotch creme Brule with coffee. It was light and hit the sweet tooth just right. And the coffee they are using is perfectly brewed. The manager Michael came to visit us and was a great host. Made us feel very welcome in his establishment.

What a gem in Waco. I used to travel very far to nearby cities for fine dining experience but didn't realize Waco has a gem too. The steak was very well cooked, lobster bisque soup and bread was one of the best I had, even better than what we had in most of the restaurants in Paris and Lyon. Dessert was also tasty and not overly sweet. We'll definitely revisit.

Amazing service, cozy vibe, and a hidden gem on the menu! DiamondBack’s was an awesome experience from start to finish. The staff was super friendly and made us feel right at home. The atmosphere is warm, elegant, and perfect for a special night out. But the real star? The Fried Lobster! It’s not on the menu, but if you ask for it—you’re in for a treat. Crispy, flavorful, and absolutely delicious. Highly recommend giving it a try if you’re in Waco!

Extremely impressed with our waiter - Cullen! He deserves a core values shout out in front of the entire company! He impressed us with the perfect balance of being friendly and yet giving us space. He knew his menu incredibly well and made us laugh and helped us enjoy an amazing five year anniversary! He was professional, precise, and honorable! The dry aged steak was super good! One of the better steaks I’ve had in a while. But the bacon slab appetizer was not great. Came out cold and just didn’t taste that good. The service was excellent! We loved our server. Atmosphere was dated. Needs a bit of a makeover. The bud lights and various cheap beers on display above the bar seem like an odd choice.

I'm a weekly customer of Saltgrass. Last time I went to Diamondbacks, it was 2.5 years ago. I was extremely impressed with the service of our waiter, Donald, the wait stand, Clayton, and the manager on duty Tyler. The appetizers and side dishes are amazing. That being said: 1. The restroom was not in good shape, and either mats below the urinals or frequent cleaning is very much needed. 2. The "tablet wine catalog" app is identical to the one from 2.5 years ago, and is awful. The app is outdated and the screen protector is cracked. 3. Your gift cards - at least the one I have - have hidden expiration dates. When I called to check when it would expire, the person didn't know about this until he actually looked up the card number. This isn't fair to your guests who have to work their life around your gift card. 4. Your menus need to be taken care of. They are falling apart.

My wife and I went there for our 20 year anniversary and they had a rose on and a hand written note on an Anniversary card on our table. Sara our waitress was the best. The food was superb and cooked with perfection. My first Tomahawk steak and it won't be my last. Thank you for making our anniversary special without our knowing. Thank you again Sara
